As we mentioned in our welcome we are a paleo primal couple. We are currently 90%/10% paleo.
To start I should probably define what a paleo diet would be and how we came about adopting it as a lifestyle.
The diet aims to eliminate all processed foods, grains, and dairy and focuses on fresh vegetables, fruits, meats, and healthy fats. These good foods are what our bodies have genetically adapted to eating, or what our ancestors, the paleolithic humans, would have eaten.
We came across the diet while Cole was on a tangential trip to Borders. Ab picked up a book called "The New Evolution Diet" by Arthur De Vany. He talks about how both his son and wife were diagnosed with Type 1 diabetes at about the same time, and his determination to take the negatives of diabetes out of their lives. Instead of catering insulin to food, he turned the tables and made the food cater to our bodies and how they respond to what we eat. By eliminating all the foods that caused an increase in blood glucose, he was left with a diet that mirrored the paleo diet.
Since I have nearly eliminated grains, sugars, and dairy from my diet, I have reduced the insulin I have to take to roughly 1/3 what I was taking before.
My a1Cs have steadily decreased, and my blood sugars fluctuate not only in a much smaller range but also do not have wild, unpredictable reactions to food.
Not only that, but I also feel great.
We don't have the budget to buy all organic produce and grass-fed/free range meats yet, but we hope to be there soon. We'll be incorporating more information on the paleo diet as we move along.
